In the bowl of your stand mixer on medium speed whisk together egg whites, cream of tartar and sea salt until light and foamy. In a large, clean (grease-free) mixing bowl, beat together the egg whites, salt, and cream of tartar until foamy. In large mixer bowl of stand mixer place egg whites.
Beat egg whites on high speed in a very large glass, metal, or ceramic bowl with high sides until foamy.
Cut through batter with a butter knife to remove any air pockets.
Remove the cake from the oven and carefully turn the cake upside down over a metal cooling rack. When you are ready to use, thaw overnight in the refrigerator or run bag under cold water until thawed. Cut gently through the cake batter in a circular motion with a butter knife (see recipe video).
