Gluten Free Carrot Cake
Gluten Free Carrot Cake. This gluten-free carrot cake is perfectly spiced, fluffy and doesn't taste at all gluten-free! To make a gluten free carrot cake sheet cake mix the batter up as directed.
This gluten-free carrot cake bakes up light, fluffy and moist just the way a carrot cake should! Add canola oil, applesauce, cinnamon, baking powder, baking soda, and salt; beat until well blended. Pour cake batter into your prepared pan and level with the back of a rubber spatula.
Mix the cake ingredients in order, stopping after the carrots; a stand mixer works best for mixing this.
In a large mixing bowl or bowl of a stand mixer, beat together all wet ingredients until well combined and the egg is completely broken up.
Grease these well or use parchment paper and baking spray. You'll want to make sure you pack the almond flour just like you would with brown sugar. You can see just how easy my gluten-free carrot cake is to make in the recipe video.
