Gluten Free Chocolate Cupcakes. In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda, and salt until there are no visible clumps. Position rack in center of oven.
Mix in the cooled, melted chocolate. Add eggs, milk, honey (if using), olive oil and vanilla. Add regular or dairy free milk, oil, eggs, and vanilla to flour mixture.
I used avocado oil but melted dairy free butter also does the trick.
In a large bowl, stir together the sugar (if using honey, don't add it yet), flour, cocoa, baking powder, baking soda and salt.
